Yep, that’s right, it’s about dang time for a new energy bites recipe here on the blog.
I’ve been experimenting with variations on this classic for years. But ever since I went sugar-free for a few months last year, that recipe actually tastes a little too sweet to me. So I’ve been experimenting with a few variations that are slightly more savory/salty, and I think I finally found a winner with this one.
It still has many of the foundational elements of oatmeal-based energy bites that I love — oats, flax seed, toasted coconut and vanilla. But this time I lowered the amount of honey, swapped PB for almond butter, and added in a ton of my long-time greatest nutty obsession — roasted almonds. Specifically, Blue Diamond Roasted Salted Almonds.
I love every single almond in the Blue Diamond line, but their roasted salted almonds have been my go-to snack since way back before the brilliance of Wasabi & Soy Sauce and Honey Roasted Chipotle ever came on the scene. And since way before this guy fell head over heels for me — ahem — the Salt ‘n Vinegar almonds in my pantry.
That is to say, Roasted Salted and I go way, way back.
Now, though, I’m pretty sure they have secured an extra-solid spot in my future with their inclusion in this recipe. Their smoky, salty flavor rounds out the sweetness of the almond butter and honey and coconut in these bites absolutely perfectly.
And in the midst of a crazy day buzzing around town, they also provide the perfect pop of protein to keep me energized and going. I feel like this is definitely the energy bites recipe for me in this sweet (although technically less-sugary) season of life. So if you’re looking for a new sweet and salty snack, breakfast, or even a healthier dessert, you’ve gotta try ’em.
This Sweet and Salty Energy Bites recipe is easy to make, packed with tons of protein, and irresistibly delicious!
- 1 cup (dry) oatmeal (I used old-fashioned oats)
- 2/3 cup toasted coconut flakes
- 2/3 cup roughly-chopped Blue Diamond Roasted Salted Almonds
- 1/2 cup almond butter
- 1/2 cup ground flax seed
- 1/3 cup honey or agave nectar
- 1 teaspoon vanilla extract, store-bought or homemade
- 1/4 teaspoon sea salt
- Stir all ingredients together in a medium bowl until thoroughly mixed. Cover and let chill in the refrigerator for half an hour.
- Once chilled, roll into balls of whatever size you would like. (Mine were about 1″ in diameter.) Store in an airtight container and keep refrigerated for up to 1 week.
- Makes about 20-25 balls.
