So…apparently you all really love the famous salad dressing at Chipotle. ?

It’s easily been our most-requested salad dressing here, and one that I’ve ordered countless times myself with a big salad at the famous burrito chain. And I’m right there with you — that dressing is amazing!!! I mean, I’m never one to turn down any recipe that includes smokey chipotles and tangy lime juice and sweet honey all paired together. But I agree that they are especially awesome in this dressing. It has a way of bringing together all of those savory ingredients perfectly in a big green Mexican salad.

But I actually love this dressing because it can be used in so many ways beyond salads!

For example, it’s a fantastic marinade or finishing sauce for just about any protein you can imagine, from chicken to salmon to steak to shrimp to pork (hello, easy carnitas!) and more. Plus, it’s also delicious when tossed with fresh or roasted veggies. And it’s my secret ingredient to add to a can of black or pinto beans (maybe along with a splash of beer) for some delicious slow-simmered Mexican beans. And the list goes on!

Clearly, so many delicious reasons to give this one a try. ?

To make this Honey Chipotle Salad Dressing, you’ll need:

  • chipotles in adobo (or you could also sub in chipotle powder in a pinch)
  • oil (I like using avocado oil, but any mild oil like extra-virgin olive oil would work well too)
  • red wine vinegar
  • lime juice
  • honey
  • garlic
  • oregano, cumin, salt and pepper

I usually blend all of the ingredients for this recipe together in a blender or food processor. But if you don’t mind mincing up your chipotles in adobo and garlic by hand, you can just as easily whisk it all together by hand in a bowl. Give it a taste and feel free to add in extra chipotles if you’d like a smokier vinaigrette, and/or more honey if you’d like it sweeter, and/or some extra water if you’d like to thin it out a bit.

As mentioned above, I recommend using this dressing:

  • tossed in any Mexi-inspired green salads
  • as a marinade or finishing sauce for any proteins (such as chicken, beef, pork, fish, shrimp, tofu, etc.)
  • as a sauce tossed with roasted veggies or kabobs
  • drizzled onto tacos, burritos, burrito bowls, etc.
  • slow-simmered with a can of beans on the stove
  • stirred into pico de gallo

This Honey Chipotle Salad Dressing is inspired by the famous burrito chain itself, and is full of irresistibly delicious sweet and savory and smoky flavors.  Perfect for salads, marinades, roasted veggies, tacos and more!



  • 3/4 cups extra-virgin olive oil or avocado oil
  • 1/4 cup red wine vinegar
  • 2 tablespoons honey
  • 12 chipotles in adobo, plus an extra teaspoon of the adobo sauce
  • 2 garlic cloves
  • 2 tablespoons freshly-squeezed lime juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • freshly cracked black pepper


  1. Add all ingredients to a blender or food processor, and puree until smooth.  Taste, and add extra honey if you’d like a sweeter dressing.
  2. Use immediately, or refrigerate in a sealed container for up to 1 week.
